The bar is surrounded by a moat with sushi boats which go all around the bar. On each boat are 3 or 4 little plates, each bordered with a different color, which have different kinds of sushi & sashimi on it. You just grab whatever looks good. The colors on the plates denoted the price - $3-$5 per plate, depending what was on it. They even have the rare jellyfish sushi.
