What other sources of information are available?

The Internet has many places to find information for all you surfers. The Usenet group alt.food.sushi is, of course, the very best place :) but there might be relevant posts in other groups as well. Often a search at http://qroups.google.com will reveal some of these posts. Any of the major search indices such as www.google.comwww.altavista.com or www.yahoo.com will also help you find web pages that may help.

Looking for sushi grade seafood online?
Catalina Offshore Products has the best sushi grade seafood available, in my opinion. Check them out for almost everything you could ever want.
 
 

Parasites, illness and bugs.

How do I know if the fish is fresh?

To assure the freshness of the fish, the chefs will hopefully inspect it vigilantly, looking for a few things:

  1. The eyes should be clear.

  2. The gills should be bright red, no slime.

  3. The scales should not come off easily.

  4. When you press the fish, the skin should "bounce back" as if one pressed one's own forearm or cheeks.

  5. It should *not* have any fishy smell.

I want to know more information on parasites. I'm worried about becoming ill from sushi. Where can I find information on parasites and other pathologies?
